In the past we have made the Woolshed Creek White as a blend of the pressings (second grade) juice from our other whites, but this year we have used pristine chardonnay grapes to make an unwooded chardonnay. The juice was the same as for our 2008 barrel fermented chardonnay, but the wine was fermented cool in stainless steel for maximum aroma and fresh varietal fruit. There are lovely melon and citrus flavours, the soft round palate typical of the variety, and a crisp dry finish.
