Light, bright yellow colour: remarkably youthful for its years. Aromas of pencil shavings, lemon, toasted bread, the palate flavours again mature showing toast and lemon butter, the acidity still very evident and freshening the dry, lingering finish and aftertaste. A high-acid and low-dosage style that is drinking beautifully but must have been quite austere when young. 06 Sep 2025 Huon Hooke

THE SILURIAN LATE DISGORGED

The name refers to the geological age (ca. 430 million years) of the rock from which our soils are derived. The Silurian is made in the traditional method from the classic varieties, chardonnay and pinot noir. The cool to mild Canberra District climate, coupled with exacting viticulture, allows harvest of these varieties at relatively low sugar ripeness, high acidity, and the delicate fruit flavours required for this very elegant style of sparkling wine. Extended lees age prior to disgorging gives autolysis complexity in addition to normal cellaring development. This is our third Late Disgorged release.
